2006 Calhoun Family
Cabernet Sauvignon notes | Picking Date: October 14-15, 2006. Brix: 26.2 Oaking Regiment: 100% French Tonnellerie Demptos for 13 months. Winemaking: Vineyard thinned to 4 tons per acre at verasion. Ripe, brown seeds at picking, but not overripe. Cold soaked for seven days. 90 degree F fermentation with partial submersed cap in 100% new French oak. Post-fermentation masceration to taste (maximizing velvet tannin release) at four days. Tasting Notes: Full bodied, blackberry, cedar and tobacco, long finish, heavy velvet tannins. |
